BBQ Black Bean Burgers

This is my go-to recipe for great tasting veggie burgers. You will never want to eat frozen veggie burgers again. These are so easy, and you’ll be proud to have created such a healthy and delicious delight. I use minimal cooking oil to help keep the calories lower.

Makes 4 patties-PREP 15 minutes; COOK 20 minutes

1 (16 ounce) can of low-sodium black beans, drained, rinsed and mashed

1/2 cup finely diced mushrooms

1/2 cup onion, diced

2 cloves garlic, peeled and chopped fine

3/4 cup dried mashed potato flakes (For binding)

2 tbsp all-natural smoky BBQ sauce

1.Preheat the oven to 375 degrees F, and cover the baking sheet with tinfoil, then lightly spray with oil.

2.In a medium bowl, mash black beans with a fork until thick

3.In the medium bowl with the black beans, stir together onion, garlic, mushrooms, BBQ sauce, and mashed potato flakes. Mix together until mixture holds together well.

4.Form into 4 patties using your hands or a burger press.

5.If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.

6.For more BBQ flavor, cover the patty in BBQ sauce once cooked.
